The most interesting part begins when we hand-stuff the chilies, using small wooden sticks to ensure the spices are tightly packed inside. This meticulous process ensures that each chili holds the spices perfectly. The stuffed chilies are then sun-dried for a few days to evaporate moisture, enhancing their flavor.
